1. Rinse and drain the chipped potatoes. Place these onto a clean dry t-towel and dry well.
2. Add to a microwavable bowl and microwave for 5 minutes.
3. Remove from the microwave, add the oil and sprinkle over the seasoning, tossing these well to coat.
4. Tip the potatoes into the drawer of the airfryer and cook at 200c for approx 20 minutes, shaking occasionally to encourage even browning.
5. Whilst the fries are cooking, heat a frying pan until hot, before adding the diced chorizo and stir frying, until the oil is released and the chorizo starts to brown.
6. Remove from the pan and set aside. Once the fries are cooked too, remove from the airfryer.
7. Tear a square of baking parchment paper or foil to fit into your airfryer drawer, check this fits, slightly crimp the edges. Place the cooked fries onto the paper and start loading these up with the cooked chorizo and grated mozzarella and cheddar.
8. Add to the airfryer drawer and cook on 200c for 3-5 minutes until golden.
9. Carefully remove the paper and fries from drawer. Scatter with the chopped jalapenos, cherry tomatoes and spring onions. Scatter over a little chopped parsley and a drizzle of spicy mayonnaise before serving.
